Storage : 1 month in a refrigerated environment (0 to 5°C). Packaging : Small Format XXL : Semi-preserved under vacuum – Drained Net Weight: approximately 100g (8 fillets).
Carefully open the box and lid. Using cutlery (preferably wooden), take out the anchovies, drain them briefly and arrange them in a dish. Wait until they are at temperature (to the touch, you shouldn’t feel any temperature difference between the anchovy and your finger) and discover the iodized notes and nutty aromas in their simplest form.
Anchovies essentially contain the same minerals / trace elements / essential fatty acids / vitamins as fish eggs – in a lower concentration – but still important and for a much lower price. When it comes to omega 3, oily fish are the best from a nutritional point of view, but anchovies are small oily fish with a shorter life and hence are placed less far in the food chain than salmon for example, meaning they are less likely to be polluted with heavy metals and microplastics. Something that is even more assured here since Maison Dehesa is is very strict about the origin of its fish.
Alberto’s family has been fishing for 5 generations on the Spanish Basque coast. Every night, he leaves with his small boat from the port of Santona, in search of the biggest anchovies and sardines in the deep seas. Through this particular attention, our fisherman protects the renewal of marine species and allows us to then work the filets in a process of unique slow-maturation process in brine.
