Our Speciale is a generous and plump oyster, an open sea with subtle iodised taste. She draws all her qualities from Normandy, within the rich and turbulent waters of the East coast of the Cotentin. We select non-triploid oysters for you, oysters that respect seasonality and take their time in order to obtain an assembly of tastes: full, fruity, iodised and unforgettable.

Thalassa Tradition is a 30 years old family-run business specialized in the production and commercialization of natural oysters and shells from Normandy. From the Fine de Mer to the Royale Utah Beach, going by the Spéciale Isigny, we are pleased to offer the Finest French & Norman oysters. Thalassa Tradition has chosen to produce only natural oysters, born at sea. Triploid oysters and hatchery-rearer oysters won’t be found in our keepnets.

You will enjoy its abundant flesh and its subtle sweet taste. Thalassa Tradition is committed not to commercialize any triploid oyster from hatchery and will only offer naturally-bred oysters. Nowadays, the « triploid oysters », bred in a closed containment and chromosomally modified are becoming more and more widespread in oyster farming in France. In France, more than 50% of oysters produced are triploid. The triploid are not bred at sea, they are reared in labs by hatcheries. For us, oyster farming is a synonym of working with nature. It is about offering our clients oysters bred at sea, in their natural environment, worked on Normandy beaches in a traditional way. Oysters that have had enough time to grow, for a unique quality

Oysters quantity:

  • Weight recommended for 1 person : Between 6 to 12 pieces per person
  • Storage : about 5 days after the packing date
  • Packing: Original wood bow. We don’t offer any oyster opening service

How to serve and an oyster?

Typically, raw oysters are served on the half shell with plenty of lemon for squeezing, Tabasco sauce and shallot vinaigrette (mignonette). Make sure they are still live (shell needs to be tighly close). Think about removing the first juice after having them shucked as the oyster will recreate a new one much more flavourful. Serve and eat the opened oyster in the coming hour.
