Our Fine de Mer benefits from our very special care. Caught and bred in the sea from our care and attention, we follow her from her first days to your plate. Didier, Louis, Amaury, Basile and their team harvest the oyster spat in Charente and bring them immediately to our Normandy beaches where they grow for 3 and a half years. Our Fine de Mer is an oyster from the open sea with true iodised taste. With an intense ocean flavour, with delicate flesh she is the natural oyster of excellence.
Thalassa Tradition is a 30 years old family-run business specialized in the production and commercialization of natural oysters and shells from Normandy. From the Fine de Mer to the Royale Utah Beach, going by the Spéciale Isigny, we are pleased to offer the Finest French & Norman oysters. Thalassa Tradition has chosen to produce only natural oysters, born at sea. Triploid oysters and hatchery-rearer oysters won’t be found in our keepnets.
You will enjoy its abundant flesh and its subtle sweet taste. Thalassa Tradition is committed not to commercialize any triploid oyster from hatchery and will only offer naturally-bred oysters. Nowadays, the « triploid oysters », bred in a closed containment and chromosomally modified are becoming more and more widespread in oyster farming in France. In France, more than 50% of oysters produced are triploid. The triploid are not bred at sea, they are reared in labs by hatcheries. For us, oyster farming is a synonym of working with nature. It is about offering our clients oysters bred at sea, in their natural environment, worked on Normandy beaches in a traditional way. Oysters that have had enough time to grow, for a unique quality
