Take the bottarga out of its packaging 30 minutes before serving. It can be eaten cut in thin slices or grated. It is not meant to be cooked (at least, not in French / southern gastronomy), and should be added to the dish when serving. There are two ways to enjoy bottarga “plain”: sliced and served on buttered toast or added to your dish after serving.
