Located in South-Aveyron region, in the middle of the regional park ‘Grands Causses» between Millau viaduc and Roquefort city, the Nayac domain welcomes a breeding farm since 2001 placed under the sign of excellence. Guillaume and his partner Loryane are raising under organic farming Aubrac beef and veal, as well as Bayeux pork (old race) in a 350 hectares domain. Find hapiness in the farm and give it back to the customer is their leitmotiv. The duo, known as «Chez Paulette» sells mostly on local food network. They produce themselves the food given to the animal without any chemical for more authenticity. They found a balance between agro ecology and organic production which benefit to the environment, the animal and the consumers. They bring the animal themselves to the slaughtering plant and take care of the transformation. Their focus is on the well being of the animal
Organic Aubrac Beef and Veal
The Aubrac is a very old French breed of cattle used for beef. Though primarily a beef breed, the milk from Aubrac cattle is also used to make traditional Laguiole cheese. The Aubrac is a very old French beef cattle breed with 150 years of breeding history.Aubrac beef is very lean, which suits the health-conscious consumer, but it also has the light grain of marbling so it maintains the juiciness and flavour.
