The Roman legions used to carry pine kernels as provisions on long journeys.Also, thanks to their exquisite flavor pine nuts are used all over Europe as a culinary ingredient widely used in confectionery and the world-famous “pesto” sauce.

Organic Pattypan Squash$129 by kg
The pattypan squash is also known as scallop squash, sunburst squash, granny squash, custard marrow, custard squash, cibleme in Cajun French, white squash, scallopini or simply “squash” in Australian English. Patty pan squash comes in yellow, green, and white varieties. Patty pan or scallop squash is a tender summer squash, like zucchini or yellow squash. The squash is most tender when relatively immature; it is generally served when it is no more than two to three inches in diameter.
Pattypan is a good source of magnesium, niacin, and vitamins A and C. One cup contains approximately 20 to 30 calories and no fat. It is often sliced, coated and fried until golden brown, or simply boiled. In Polish cuisine, they are pickled in sweet vinegar.
Storage: The hard skin protects the flesh and allows it to store longer than summer squash. Store Pattypan Squash in a cool, preferably dark, well-ventilated area for up to 3 weeks. Wrap cut pieces in plastic and refrigerate up to five days.
Usage: In fine cuisine, its tender flesh is sometimes scooped out and mixed with flavorings, such as garlic, prior to reinsertion; the scooped-out husk of a patty pan also is sometimes used as a decorative container for other foods. In Polish cuisine they are pickled in sweet vinegar. Pattypan can be prepared in a variety of ways including steaming, baking, sautéing and deep-frying. Generally, anywhere you can use a zuchinni, a pattypan will do.

Bouquet garni, which is French for “garnished bouquet,” is a classic herb mixture used for preparing stocks, soups, casseroles, meats, and vegetables. It traditionally comprises a few sprigs of thyme, rosemary and a bay leaf. These herbs may be bundled into a strip of leek or a piece of celery stalk, or tied in a muslin bag or with string, to keep them together during cooking and allow easy removal before serving. Using a bouquet garni instead of simply adding the herbs to your dish helps with flavor, texture, convenience, and presentation. Fresh herbs will get soggy and often discolor when left to cook for a long time, and dry herbs are not the most attractive when floating at the top of a finished dish. Bundling up the herbs—whether dried or fresh—also makes for easy removal.
