Kaffir lime (or Combawa, term generally more used to identify the fruit) is a small citrus very similar to lime, with the juice so acidic that it cannot be used fresh, but only as an ingredient in addition to preparations that require cooking. The peel is strongly ruffled and irregularly rounded, bright green to dark green. The taste is extremely sour and therefore the fruit cannot be consumed fresh. The extreme acidity of the combava does not allow its ingestion as a fresh fruit, but does not limit its use in the kitchen.

Usage: The peel is regularly used as a spicy ingredient in sauces and condiments, and thin slices of combawa accompany fish dishes.  Berbere: properties and uses of this mix of African spices
After appropriate processing, the juice is used in the preparation of some rum-based liqueurs that are produced in South Africa, Madagascar and on the island of Reunion. However, its main use takes place in the form of powder, obtained by drying the peel.
