The brown lentil is the most interesting of the legumes. It is the richest in protein. It is rich in minerals, especially iron and magnesium, as well as fibre. Recipe idea: In a saucepan pour 3 bowls of water, 1 chopped onion, 50ml of olive oil, 2 tablespoons of tomato paste, 1 clove of garlic and 2 bay leaves. Bring to a boil and add 1 bowl of lentils, pumpkin and 2 leeks in pieces. Cook for 20 to 30 minutes over low heat. Salt at the end of cooking and season with fresh herbs (parsley, coriander).
