Centuries ago, the very first jasmine teas were produced during the Song dynasty in Suzhou, near Shanghai. Today, we use the same ancestral handmade traditions. We layer jasmine flowers and tea in stacked trays, millefeuille style, and leave them overnight as this is when the flowers release their aromas. We repeat this method for a week, changing the flowers each evening, for a delightfully floral, delicate tea.
