Like an old wine, this vinegar needs to be “decanted” several hours before, pouring a third of the bottle into a glass. This simple process allows the vinegar to oxygenate and thus open up the entire aromatic bouquet.
This vinegar can be used in raw seasoning or cooked, in reductions for your meat juices or vegetable pickles.
Pepe’s family has been making wine in the Cordoba desert for 8 generations. He has the most beautiful “albarizas” vineyards in Andalusia. These lands are alive and untouched by chemicals. Vinegars owe most of their benefits to their high content of good acids (acetic and malic in particular) improving digestion and metabolism balsamic vinegar because it comes from grapes is rich in resveratrol (anti-aging) and in quercetin (anti-inflammatory/infectious) and its fermentation and aging load it with excellent polyphenols for the cardiovascular system which place it above other vinegars, but its downside lies in its generally high sugar content, but this pitfall seems to have been avoided here.
