Our Stuffed Squid are ready to serve. For best results, heat the contents of the jar over low heat, then place the Stuffed Squid on a platter of rice, spaghetti “al dente” or potatoes. Then coat everything with the rest of the sauce that you have previously mixed with our Sétoise Rouille for a Sète-style presentation.
The terroir of the sea
Azaïs-Polito, artisanal maker of fine preserved fish dishes, is known and recognized for the quality of its products, which have become a primary feature in baskets of gourmet products from Languedoc-Roussillon.
This family business is now the last cannery in the city of Sète, the first fishing port in the Mediterranean, where it was founded in 1963 by two old manufacturing families.
Jean Claude Polito,the CEO, who has become an artisanal preserver, says, «I guarantee that all our products are manufactured with the respect for taste and tradition of the original recipes. Our recipe for fish soup has remained the same for almost 50 years, that’s all there is to say…»
The products are made with regional ingredients whenever possible. Iis an invitation to discover the specialities of Sète, like rockfish soup, spicy mayonnaise, the renowned squid and mussels stuffed, that the company was the first to commercialize.
The company also provides full traceability upstream and downstream of the products it manufactures and is certified HACCP.
Their products are very high quality, highly concentrated in fish, easy to use (requiring only few minutes for preparation), and packaged perfectly to be adaptable tohigh, medium and low seasons. They also have long use-by dates and can be stored at room temperature before opening.
Thanks to the delicious ingredients blended to an expertise unequaled, the company AZAÏS-POLITO has won a lots of gastronomic prices. It has been awarded by the « Herault Gourmand « contest sixteen times, was rewarded by the Fine Food Guild International by two « Great Taste Good Award» for its rockfish soup and its rouille of Sète and finally was nominated for two selections at « Sial Innovation « of the years 2012 and 2014.
