Truffles are hypogean mushrooms that grows and live underground, from few centimetres to a meter under the level of ground, living in symbiosis with roots of trees and plants; their favourite place is the root of oaks, lindens, hazels and poplars from which they catch the organic compounds.Frequently, you will find white truffles on the foots of oaks, poplars, linden and hazel, hornbeam, turkey or English oak, whereas the black truffle prefers the roots of holm oak, turkey oak, linden, hazel and cistus. In any case, truffles needs clean and unpolluted soils, humid and with trees.

Storage: We deliver White Truffle in a special packaging, when you receive it you need to : – Put the truffle in a new wrapping paper and put it in a closed box in the fridge. Change the wrapping paper 2 to 3 times a day. OR Throw the wrapping paper and place the truffle in a closed box filled with uncooked rice, in the fridge.
Usage: simply shave it on your dish with a dedicated slicer.

The characteristic Alba Truffle, generally spherical and irregular, presents an external crust called “peridio”, clear, of a light yellow tending towards ochre. The internal pulp, called “gleba”, is solid with a milky colour or tending towards pink and brownish, covered by white veining, branched and thick.
The size varies from 2 to 9 cm, depending on the period when the truffles are collected and based on the maturation status.
Herbal and earthy, firm and crisp, green beans are universal favorites. They are a classic side dish served on their own — simply steam, sauté, or boil them (we like to add a little butter and lemon). Their texture also stands up to long cooking in dishes like casseroles and stews.

Usage: Perfect berry fruit for dessert, they are already sweet so you don’t need to add sugar. You can add and the whipping cream on top. You can use them to make your own jam or include them in your dessert recipes. They match very well with pistachio.
All fresh spinach can be eaten raw. You’ll need to cut it up as it will be tougher and stringy. Always eat raw vegetables whenever possible, as they won’t have lost any of their vitamins. Cooked spinash are delicious , especially mixed with fresh cheese or cream!

Usage: Classic in salad with one of our premium oil and vinegar , and fresh goat cheese, brocciu, feta or smoked salmon. Wash them, shake the excess water off (if you plan to stir-fry it or eat it raw in a salad, you should pat it dry with kitchen paper, too). Older spinach may have tough stems – cut these off. If the rib of the leaf is particularly big, fold the leaf in half lengthways with the rib facing outwards, then tear it away from the leaf.

Turnips are a popular root vegetable of European origin related to the cabbage and radish. Inside its delightful thin skin is the crisp white fleshy root. Although turnips sometimes have a yellowish flesh, the majority are bright white. Turnip leaves are slightly hairy, yet still edible, called turnip greens. You will receive golden ball or purple one depending of the availability.

Storage: Refrigerate, unwashed in a plastic bag up to 10 days. Turnips should be scrubbed with a brush under running water, prior to use. There is no need to peel or cook if the skin is thin.
Usage: Enjoy fresh turnips just as you would a carrot, a delightful substitute. They are quite tasty backed with grated cheese or in a cooked salad.
