Chard has been used in cooking for centuries, but because of its similarity to beets and vegetables such as cardoon, the common names that cooks and cultures have used for chard may be confusing;[4] it has many common names, such as silver beet, perpetual spinach, beet spinach, seakale beet, or leaf beet.

Usage:  Mature chard leaves and stalks are typically cooked (like in pizzoccheri) or sautéed; the bitterness fades with cooking, leaving a refined flavor which is more delicate than that of cooked spinach. In Egyptian cuisine, chard is commonly cooked with taro root and coriander in a light broth. They are good with bechamelle as well.

Bring to a boil and add 1 bowl of lentils, pumpkin and 2 leeks in pieces. Cook for 20 to 30 minutes over low heat. Salt at the end of cooking and season with fresh herbs (parsley, coriander).

The pattypan squash is also known as scallop squash, sunburst squash, granny squash, custard marrow, custard squash, cibleme in Cajun French, white squash, scallopini or simply “squash” in Australian English. Patty pan squash comes in yellow, green, and white varieties. Patty pan or scallop squash is a tender summer squash, like zucchini or yellow squash. The squash is most tender when relatively immature; it is generally served when it is no more than two to three inches in diameter.

Pattypan is a good source of magnesium, niacin, and vitamins A and C. One cup contains approximately 20 to 30 calories and no fat. It is often sliced, coated and fried until golden brown, or simply boiled. In Polish cuisine, they are pickled in sweet vinegar.

Storage: The hard skin protects the flesh and allows it to store longer than summer squash. Store Patidou Squash in a cool, preferably dark, well-ventilated area for up to 3 weeks.  Wrap cut pieces in plastic and refrigerate up to five days.
Usage:  The patidou turned out to be delicious roasted and mashed with some butter and spices including nutmeg and Caribbean colombo powder, which is a kind of curry powder. The flesh has a distinct flavor of chestnuts and isn’t as sweet as some other squashes. Squash can be enjoyed in many ways- usually preparation involves extensive baking to soften the squash and then you can do whatever you please once the flesh is tender.

Mollar de Elche pomegranate has traditionally been a highly prized and esteemed fruit in many civilizations. Together with the palm tree, the pomegranate tree is the most characteristic tree in Campo de Elche, and has been known from time immemorial. In Spain, the Mollar de Elche pomegranate is by far the most popular variety and is unquestionably the most widely grown in this country. Pomegranate is one of the world’s oldest known fruit, also translated as the “apple with many seeds” by the French. Inside the fruit, seeds cluster like a glimmering carpet beneath thin yellow membranes. These small red seeds are packed with health-supporting antioxidants along with deliciously sweet, tart juice. On the outside, the apple-sized fruit has a leathery shell that can range from pink to deep crimson, even russet brown. Although native to Persia  pomegranates have become a worldwide culinary necessity, whether they’re used to garnish green salads or used as a base for jelly, sorbets and cocktails. The foolproof way to prep Pomegranates is to use the no-mess “underwater” technique so that you can avoid any staining. Cut the Pomegranate into quarters over a paper towel. Fill a medium bowl with cold water. Hold a Pomegranate quarter under the water, seed side down. Pull edges back, exposing seeds. Run fingers over seeds to remove them. Turn fruit over, still holding underwater, and pick out remaining seeds.
