We select our salmon with the greatest care in one of the few aquacultural farms labeled ASC which reproduces its natural cycle as closely as possible and guarantees the quality of this fish. Our salmon evolves in an optimal environment, close to its natural habitat off the coast of Norway. After spending almost a year in fresh water, it continues to grow in the open sea in enclosures selected according to currents, water temperature, oxygen content and perfect exposure.

Our Antarctic Seabass, also known as Patagonian Toothfish or Chiliean Seabass is caught in the French waters surrounding the Kerguelen Islands, at a depth of around 1,500 metres. Our fish are caught according to very strict specifications that meet all the criteria of the MSC label. With a texture that melts in the mouth, a white-coloured flesh and a unique flavour with hints of almond butter, it is hardly surprising that this product is a best-seller around the world!

 

Characterics of our Patagonian Toothfish :

Cooking Tips :

  • Pan fried/roasted: In a pan put butter and olive oil with a hint of garlic and cook for 10 minutes maximum.

Kinmedai, also known as the splendid alfonsino, is traditionally served at Edomae sushi restaurants. The fish is usually aged for 2 to 3 days after capturing using the Ikejime processing technique. Our red alfonsino is flown directly from Japan and Sashimi Grade certified. Its firm texture and flavorful meat is best served with skin lightly torched, grilled with charcoal, or lightly blanched.
