We select our salmon with the greatest care in one of the few aquacultural farms labeled ASC which reproduces its natural cycle as closely as possible and guarantees the quality of this fish. Our salmon evolves in an optimal environment, close to its natural habitat off the coast of Norway. After spending almost a year in fresh water, it continues to grow in the open sea in enclosures selected according to currents, water temperature, oxygen content and perfect exposure.

Scallops are characterized by offering two flavors and textures in one shell: the meat, called “scallop”, which is firm and white, and the roe, called “coral”, which is soft and often brightly coloured reddish-orange. Don’t mistake them with bay scallops or other non French products. Those scallops are carrefully sourced from 100% French artisanal fishing and follow strict catch quotas. You can use them for tartare, sushi, or sear them. They are undoubtedly the best shellfish.

Harenga is the leading caviar substitute avilable today to caviar lovers, and should not be confused with ‘Lump Fish’ or other mock caviars. Worries for the diminishing sturgeon population as a result of demand for the prized Beluga caviar has seen caviars such as Harenga quickly gaind popularity. It is pearlescent black in colour, with taste nuances somewhat supposedly similar to Beluga.
