Morteau Sausage

The saucisse de Morteau originates in the mountainous region of Morteau, near the France-Switzerland border, using pork from pigs that are fattened traditionally. The meat is smoked in gigantic pyramid-shaped chimneys called tuyes, using the burning sawdust of conifer and juniper pine trees harvested from the nearby mountains. This combustion process, practiced and refined since Ancient Roman times, lends it a naturally intense, smoky flavor, without actually cooking it. Added spices, such as nutmeg, coriander, caraway and allspice enhance this generously dense meat, making it extra flavorsome.

We recommend cutting the sausage into pieces before boiling or poaching it in water or milk. It goes excellently with vegetables such as cabbage, leeks, onions and bay leaves. You might also use it to enhance stews or tartiflettes.

Frozen Free Range Farmed Poularde – About 2.2 kg

The ‘’Poularde’’ is the ‘’Poulette‘s big sister’’. It’s bigger and older. It’s farmed free range for a longer period than the ‘’Poulette’’ (4 to 5 months). Then it stays 15 to 30 days in fattening coop. Its egg chain is developped and it starts to lay. Its flesh is tender, fat and tasty. Hatching of 2 eggs always give a male and a female. Females become ‘’Poulette’’ then ‘’Poularde’’ at around 18/20 weeks. Then it will become a laying hen if left longer.
The transitions between ‘’Poulette’’ and ‘’Poularde’’ vary regarding climate and season.

The bird will be gutted, but with giblets left in.

Duck Gizzard Confit (Gesiers) – 200g

The gizzard is a small digestive pouch made of a thick muscle found in poultry and game birds. Gizzards can be roasted with the bird, minced and added to a stuffing or combined with the other giblets (heart, liver, kidneys, etc.) to make a ragoût. They are often preserved, especially in duck fat to make a confit. Seasonned with Guerande Salt, and kept in duck fat, all the flavours of duck are preserved.

Usage: take out the gizzards from the jar, and heat them in a pan, low fire. Cut them into regular slices to be able to serve them on your salad. Perfect in a Landaise salad with foie gras, smoked duck magret, salad and corn. S
