Resembling a carrot in shape with a pale yellow-white appearance is wider in shape than its cousin the carrot. Under its knobby skin is a creamy smooth root with a firm texture. The firm texture and sweet, nutty flavor of parsnips have foodies everywhere reaching for their roasting pans and vegetable peelers. Melissa’s Parsnips resemble a carrot in shape with a pale yellow-white appearance but are wider than its cousin the carrot. Under its knobby skin is a creamy smooth root with a firm texture.

Storage: Refrigerate, unwashed in a plastic bag up to 10 days. Parsnips should be scrubbed with a brush under running water, prior to use.

Pink Potato Red Emmalie – Laurent Berrurier

A perennial tuber from south America which looks like a potato, grows like a Jerusalem artichoke, and tastes a bit like a pear. In French named “poire de terre”, Yacon is also refreshingly juicy. “Yacon” means “water root” in the Inca language and its tubers were historically highly valued as a wild source of thirst-quenching refreshment for travellers. The liquid can also be drawn off and concentrated to produce yacon syrup. As with Jerusalem artichokes, yacon tubers are rich in an indigestible sugar – inulin – meaning that the syrup they form has all the sweetness of honey or other plant-derived sweeteners like maple syrup, but without the calories. Yacon also benefits the bacteria in the intestinal tract and colon that boost the immune system and aid digestion. This potential as a dietary aid and as a source of sweetness for diabetics has led to yacon being grown more widely, especially in the USA.
Fresh out of the ground yacon is very much like a baking potato to look at. However its flavour is a little strange for what you might expect from an underground tuber – it’s like a sweet cross between early apples, watermelon and very mild celery, with a touch of pear. Mildly flavoured raw when first dug, it’s the texture as much as the taste which sets yacon apart. The tubers have that fine texture of water chestnuts. They don’t quite collapse as such – they’ve more resistance than that – but, like a very fine sorbet, they do sort of give in.

Nettle Bunch (Orties ) – Laurent Berrurier

When using nettles in the kitchen, the best advice is to wear a thick pair of gloves, and then handle them as freely as you want.

Nettles are a historic ingredient, in fact ‘nettle pudding’ has been officially declared Britain’s oldest pudding, created round 6,000BC. The green weeds have been used for nettle beer and nettle wine through the ages, and are currently back on the menu thanks to the trend for foraging — with a simple nettle soup being an indisputably beautiful, British springtime dish.

Nettles have a verdant, spinach-like flavour, and you can almost taste the iron and minerals bursting out from the leaves. Best of all, these plants litter Britain’s verges and hedgerows in early springtime, are easy to identify and free to pick.

How to cook with nettles
It’s important to start by washing the leaves, you never know what animal has been doing what nearby!

Once the nettles have been washed, pick the leaves off the stalk. At this point, it’s best to think of stinging nettles in a similar fashion to spinach in terms of cooking the leaves. Quickly blanching them in a pot of boiling water will deaden the sting. But leave them for too long and – like spinach – the leaves will wilt too far, and start to lose flavour, texture and goodness.

Treat the cooked nettle leaves as you would treat cooked spinach leaves. Firstly, squeeze the moisture out of them and then add a splash of cream for a delicious side dish, or chop them loosely into a pasta sauce. Like spinach, it’s possible to freeze nettle leaves — do it in an ice cube tray, and then you can quickly defrost one cube at a time to quickly and easily add big green flavours to anything from an omelette to a risotto.

Organic White Almond Puree – 300g

White almond or peeled almond, is the skinless almond. The peeling of the almond is done through a purely physical operation, which involves removing the skin of the whole almond with steam humidification. The white almonds are dried by hot air.

This soft and natural drying improves their digestibility, develops their flavour, while preserving their valuable unsaturated fatty acids.

Then they are ground by millstone and put into jars.

Almond butter is essential for cooking instead of using animal fats.

 Direction: It can be incorporated at the end of cooking vegetables for example, and is an excellent alternative to cream. It is also used to supplement the diet of young children.

Recipe idea: Almond milk

Mix two tablespoons of white almond butter with a little water.

When you have the cream consistency then add the remaining water until you get the milk consistency.
