Organic Coral Lentils – 500g$89
Lentils are very interesting legumes. They are very rich in vegetable proteins and fibres, as well as in minerals and trace elements (phosphorus, iron, manganese, copper, folate, zinc). They are more digestible than other legumes and have a shorter cooking time. Rich in lysine, they are complementary to cereals. They improve the balance of a cereal and vegetable meal. Coral lenses are orange in colour and are more common in North Africa. They are peeled lenses (hence their colour) that cook very quickly.
Dhal recipe: Boil a liter of water with 1 clove of crushed garlic, 1 teaspoon of cumin and sweet paprika, 50gr of tomato paste, 3 fresh tomatoes in pieces, 2 chopped onions. Add 300gr of lentils and boil for 20 minutes over low heat. Season with salt and garnish with chopped cilantro.

Bulgur comes from cracked whole-grain kernels of wheat that get parboiled and dried before packaging.
Though bulgur wheat is most commonly found in tabbouleh salad, you can use it just like rice or couscous, or any other whole grain, such as barley or quinoa. Instead of rice, try pairing your favorite vegetable stir-fry or vegetable curry with cooked whole grain bulgur wheat.
