Girolles “CANTHARELLUS CIBARIUS”  are one of the most prized and sought after of wild mushrooms due to their exquisite taste with an aroma that hints at fruity apricots. Available all year round from our suppliers throughout Europe and the USA, girolles are very versatile and work well in many different ways. Try serving with griddled scallops and a drizzle of port wine sauce. These mushrooms are a wild product and, as such, sometimes arrive covered in a little dirt. This is harmless and can be cleaned off using a soft mushroom brush.

Wild Cep Mushroom

The name porcini means “piglets” in Italian. They’re also known as the king bolete, cèpe (in French), Steinpilz (the “stone mushroom” in German), and a host of other fun names from all over the world. The Latin name is Boletus edulis. Not only do they taste good but also they’re good for you. This mushroom reportedly has a high protein content, which makes them a great meat substitute in vegetarian dishes.

Usage:  If starting with fresh porcini, make sure to brush them off with a damp cloth after checking for worms. Don’t wash them with water unless you will be using them right away. It doesn’t take long for a wet mushroom to become too soft or mushy. After your mushrooms are cleaned and inspected, simply chop and use in your favorite Italian recipe! Wild Chanterelle Mushroom –

The Grey Chanterelle mushroom (Cantharellus tubaeformis) also known as Funnel Chanterelle is a small chanterelle with a brown cap . There are smaller, more delicate “chanterelles” that grow throughout the summer and into the fall. They have a similar look to chanterelles with their shape and the blunt edge gill like ridges that run partway down the stem. They seem to be half way between a chanterelle and a black trumpet with their semi hollow funnel-like shape.

Usage:  Try only a little the first time. These have a really nice aroma that is almost identical the the chanterelle. The smell when drying is outstanding. They can be sautéed for truly great flavor but are less interesting when deep fried. They are often best plain or in ways that showcase their subtle flavor. They reconstitute better than a chanterelle and make a nice mushroom powder that is outstanding for flavoring alfredo, and béchamel based sauces. Since the flavor is subtle it should only be mixed in certain ways. A cantharellus/craterellus mix is nice. Chicken, pork or fish, rice, pasta, some vegetables, some cheeses and soups are good choices for recipes using these.

A very tasty mushroom but as with all Morels it must be well cooked before consumption.

Fresh, unwashed morels should be stored in a paper bag and used as quickly as possible. You can also store them in the fridge for up to a week, but this can also dry them out and alter the texture.

To prolong the life of your morels, you can dry them by laying them out in the sunlight and rotating them. Dried morels will last up to six months stored in an airtight container. When you’re ready to use them, simply tap them with some water and wait. Pinch them a few times until they are plump and ready to use. Dried morels can also be frozen, and thawed for use in soups or purees.
