Organic Green Lentils – 750g bulk

The real French green lenses, biodynamically grown. Rich in vitamins (B1, B2, B6), iron and calcium, green lentils provide 4 times more fibre than rice, pasta or potatoes and contribute to lowering cholesterol levels. These can be pale or mottled green-brown in color with a glossy exterior. They have a robust, somewhat peppery flavor. This makes them ideal for salads and other side dishes.

Preparation: Soak them in warm water for 1 hour before cooking. Rinse them quickly in cold water, drain them and place them in a pan with 3 times their volume of unsalted cold water, to prevent them from hardening. By doing so, the lenses will retain their hold while being soft under the tooth. Bring to a boil and cook covered for 20 to 25 minutes on small simmering.

Beluga lentils are a type of small, black lentil, which get their name from their resemblance to Beluga caviar. They are grown in Belgium and are less common than red, yellow and green lentils.

Organic Coral Lentils – 500g

Lentils are very interesting legumes. They are very rich in vegetable proteins and fibres, as well as in minerals and trace elements (phosphorus, iron, manganese, copper, folate, zinc). They are more digestible than other legumes and have a shorter cooking time. Rich in lysine, they are complementary to cereals. They improve the balance of a cereal and vegetable meal. Coral lenses are orange in colour and are more common in North Africa. They are peeled lenses (hence their colour) that cook very quickly.

Dhal recipe: Boil a liter of water with 1 clove of crushed garlic, 1 teaspoon of cumin and sweet paprika, 50gr of tomato paste, 3 fresh tomatoes in pieces, 2 chopped onions. Add 300gr of lentils and boil for 20 minutes over low heat. Season with salt and garnish with chopped cilantro.

Mogette de Vendée are white beans of the Phaseolus vulgaris species, produced in the Vendée region in France since the 16th century. When dry, the beans have delicate skin with accentuated veins, which melts in the mouth once cooked, their flesh becoming soft and creamy and the taste slightly salty and sweet with unique hints of chestnuts and leeks.

Mogette beans are expertly harvested by the producers, they can’t be harvested too early because the beans will have a raw taste, nor too late when the beans lose their flavor. Instead, they are harvested at the right time when they are yellow and semi-dry.The beans are a must-have ingredient in a traditional French cassoulet, used in stews or in salads paired with tomato and basil.
