Organic Coral Lentils – 500g

Lentils are very interesting legumes. They are very rich in vegetable proteins and fibres, as well as in minerals and trace elements (phosphorus, iron, manganese, copper, folate, zinc). They are more digestible than other legumes and have a shorter cooking time. Rich in lysine, they are complementary to cereals. They improve the balance of a cereal and vegetable meal. Coral lenses are orange in colour and are more common in North Africa. They are peeled lenses (hence their colour) that cook very quickly.

Dhal recipe: Boil a liter of water with 1 clove of crushed garlic, 1 teaspoon of cumin and sweet paprika, 50gr of tomato paste, 3 fresh tomatoes in pieces, 2 chopped onions. Add 300gr of lentils and boil for 20 minutes over low heat. Season with salt and garnish with chopped cilantro.

Organic Green Lentils – 750g bulk

The real French green lenses, biodynamically grown. Rich in vitamins (B1, B2, B6), iron and calcium, green lentils provide 4 times more fibre than rice, pasta or potatoes and contribute to lowering cholesterol levels. These can be pale or mottled green-brown in color with a glossy exterior. They have a robust, somewhat peppery flavor. This makes them ideal for salads and other side dishes.

Preparation: Soak them in warm water for 1 hour before cooking. Rinse them quickly in cold water, drain them and place them in a pan with 3 times their volume of unsalted cold water, to prevent them from hardening. By doing so, the lenses will retain their hold while being soft under the tooth. Bring to a boil and cook covered for 20 to 25 minutes on small simmering.

Einkorn is the oldest wheat known to scientists, and is considered man’s first wheat.  The term einkorn is derived from the German language and interpreted to mean “single grain”. Einkorn has a higher percentage of protein than modern red wheats and is considered more nutritious because it also has higher levels of fat, phosphorus, potassium, pyridoxine, and beta-carotene.

Known for its leading role in tabbouleh, a lemony Middle Eastern grain salad with tomatoes, onions, and herbs, bulgur wheat has been around for at least 4,000 years. Arguably the world’s first convenience food, bulgur production originated in the Mediterranean region, but it has spread far and wide. Bulgur remains one of the easiest to cook and most versatile of the whole grains.

Bulgur comes from cracked whole-grain kernels of wheat that get parboiled and dried before packaging.

Though bulgur wheat is most commonly found in tabbouleh salad, you can use it just like rice or couscous, or any other whole grain, such as barley or quinoa. Instead of rice, try pairing your favorite vegetable stir-fry or vegetable curry with cooked whole grain bulgur wheat. It also makes a good binding ingredient in vegetarian or meat patties and balls, such as the Middle Eastern dish called kibbeh.

Chickpea flour, also known as gram, besan, or garbanzo bean flour, has been a staple in Indian cooking for centuries. It is typical from the Mediterranean. Chickpeas are versatile legumes with a mild, nutty taste, and chickpea flour is typically made from a variety called Bengal grams. This flour, which you can easily make at home, has recently grown in popularity across the world as a gluten-free alternative to wheat flour. Usage :  to drain and ready to eat. You can use them in salad, mix them with herbs, raw veggies, garlic, olive oil, lemon, or blend them to make a kind of houmous, or falafels. You can keep the water of the chick peas (named Aquafaba) and whip it up  like egg whites.

The brown lentil is the most interesting of the legumes. It is the richest in protein. It is rich in minerals, especially iron and magnesium, as well as fibre. Recipe idea: In a saucepan pour 3 bowls of water, 1 chopped onion, 50ml of olive oil, 2 tablespoons of tomato paste, 1 clove of garlic and 2 bay leaves. Bring to a boil and add 1 bowl of lentils, pumpkin and 2 leeks in pieces. Cook for 20 to 30 minutes over low heat. Salt at the end of cooking and season with fresh herbs (parsley, coriander).

Organic White Vendée Beans- 500g

Mogette de Vendée are white beans of the Phaseolus vulgaris species, produced in the Vendée region in France since the 16th century. When dry, the beans have delicate skin with accentuated veins, which melts in the mouth once cooked, their flesh becoming soft and creamy and the taste slightly salty and sweet with unique hints of chestnuts and leeks.

Mogette beans are expertly harvested by the producers, they can’t be harvested too early because the beans will have a raw taste, nor too late when the beans lose their flavor. Instead, they are harvested at the right time when they are yellow and semi-dry.The beans are a must-have ingredient in a traditional French cassoulet, used in stews or in salads paired with tomato and basil.
