The bottarga is after that enrobed by a mix of alimentary and bee wax to insure a high level of conservation of the product.
To please the delicate palate of our customers, this one is aged with sumac and olive oil. The sourness of the sumac gives a twist to the bottarga, perfect match with the iodizeness. Work very well with fish or seafood.
