The vanilla orchid is native only to Mexico and relies on a rare black Mexican bee to pollinate naturally. In 1841, a French owned 12-year old slave on Île Bourbon (now Réunion Island) discovered how to hand-pollinate vanilla orchids. Shortly thereafter vanilla plantations were introduced and became commonplace on the island of Madagascar.  It is a vine of which some thirty sub-species have been identified. The vanilla market has products of different origins with marked differences:
• Mexican vanilla (vanilla fragans) with its subtle chocolate, spice and fruit fragrance
• Tahitian vanilla (vanilla tahitensis), has a low vanillin content and strong aniseed aroma with notes of prunes.

Cooking tips : there are so many option to use vanilla. You can put the skin of the bean into a dish with sugar to make you own vanilla sugar.

The smell, or should we say the fragrance of this extraordinary sugar is sublime, you’ll never want to stop smelling it. It is fine, subtle, delicious, it doesn’t smell of sugar, but of sweets, pastries. It is powerfully addictive. Despite its sweetness, its notes are fresh, floral, with notes of chocolate ice cream, light caramel and a subtle roast note. The wild sugar palm tree grows naturally throughout Cambodia. It is also the national symbol of the Kingdom. This tree has nothing to do with the palm oil tree. Extracting the sugar from its flowers is a Cambodian ancestral tradition. This activity plays a very important role in the country’s economy.
The palm sugar, which is 100% natural is not refined and thus keeps all of its minerals and micronutrients. It is naturally balanced in sucrose and fructose and as it doesn’t contain glucose, this natural sugar doesn’t cause insulin secretion, so it is the ideal sugar for diabetics because it has a very low glycemic index, less than 30.

Cooking tips : It is a great alternative to regular sugar in all your sweet dishes.
