White Asparagus- 500g
$349 by kgWhite asparagus is revered on the continent for its fatter spears and sweeter, more delicate flavour than green asparagus. In Germany it’s nicknamed ‘white gold’ – and a full-blown festival (Spargelfest) celebrates its arrival each year! The difference is all in the growing: white asparagus is grown underground, preventing the spears from photosynthesising and going green. The season is short.

Storage: Store asparagus in the fridge. Best eaten as soon as possible – to keep it fresh, you can stand asparagus upright in a pot with a little water. Straight from the farm, so wash before cooking.
Usage: White asparagus tends to be thicker and more fibrous. Peel the whole length of each spear (except the tips), and boil for about 10-15 mins, until tender to the press of a fork just below the tips. They also lend themselves nicely to roasting and grilling. If you want to serve white and green asparagus together, cook them separately (unless the stalks look to be of similar thickness). Embellish simply to show off its flavour: hollandaise sauce is the classic in the north of France, and vinaigrette in the south.

Their unique size makes it possible to practice a slower and longer maturation, and to avoid astringency and salt, two defects often present in many bottargas on the market. A must have for great chefs! Deliciously soft texture, similar to sea urchin tongues. Dominant mineral notes, fruity on the finish. To be enjoyed slightly chilled like sashimi, or with a spoon like caviar.

Maison DEHESA wanted to reinvent anchovies, offering a buttery texture and delicate salty and nutty notes, thanks to an unprecedented 12 to 24 months curing period. Their bones are removed using special tweezers, allowing for the lowest salt content on the market.

Japanese Smoked Sardine Sashimi XXL – Large Format
$325Maison DEHESA is reinventing sashimi-style canned sardines, thanks to Japanese smoking methods. Their deboning with tweezers, also unique, gives them the lowest salt level on the market. In addition to the salting process, they are cold smoked in order to sublimate their fat and give them a firm yet melting texture like sashimi.

PX Balsamic Vinegar Aged 50 years – 375ml
$389Maison DEHESA has created the 1st balsamic vinegar without added sugar or caramel. Its grape must is not cooked but raisined, according to the tradition of great cooked sherry wines. Its natural sugar comes from the sweetest grape variety in the world: Pedro Ximenez.
To give it the nobility of a sherry grand cru, we age the vinegar using old PX wines from 5 to 50 years old, according to the traditional solera method and without filtering.
